The vinegars

Both are fermented twice from Dornoch Distillery wort and aged in ex-whisky casks. They’re unpasteurised, so the mother is still alive, and everything comes in food-safe plastic for safe kitchen use.

Ben Nevis cask · 6% acidity

Cask-Aged Malt Vinegar

The everyday one. Aged in a Ben Nevis whisky cask and blended through a three-tier solera, so every batch carries a little of the last.

Tasting notes: bright and sharp, with a malty depth, a softness from the wood and a long, mellow finish.

Use it for: dressings, pickles, sauces, deglazing a pan, and chips.

Formats: 5L in stock now, 1L from later this week, or refills into your own container.

1998 Glen Garioch cask · 6.6% acidity

Peated Malt Vinegar

Made from peated malt wort and aged on its own in a 1998 Glen Garioch cask, well away from the solera.

Tasting notes: a rich peaty nose, then a sweetness on the palate that balances the smoke rather than fighting it.

Use it for: barbecue sauces, pulled pork, grilled asparagus and charred veg, or in place of liquid smoke. It brings acidity as well as smoke, so go easy on any other vinegar in the recipe.

Formats: 5L in stock now, 1L from later this week, or refills into your own container.
